While traveling in Thailand in 2014, Denise and I participated in a Thai cooking class and learned to make authentic Thai curry. Within a few days of flying home, we drove to the nearest Asian market and bought a wok, mortar and pestle, and lots of authentic ingredients. When preparing for a trip I will make a large batch of curry, freeze and then vacuum pack it using our Foodsaver. But many readers have asked for an easy Thai curry recipe that can be made while traveling.
Easy Thai Curry: Use Curry Paste
If you don’t have the ingredients or apparatus to make authentic Thai curry, then it is best to rely on a good quality, pre-made, curry paste. It isn’t likely you are going to find this at your neighborhood grocery store, so a special trip to an Asian market or Amazon will be required.
