Recipe of the week: Spam pineapple delight

Each week, Let’s RV will publish one recipe each week from the RV Centennial Cookbook authored by Evada Cooper.

The book features a collection of recipes submitted by RVers themselves. The author is providing the recipes in hopes of encouraging RVers to submit more recipes to be included in a new edition expected to be published soon.

This week’s recipe is for Spam pineapple delight. It was submitted by Debbie Slone, from Fort Myers, Fla. They have been RVing for 15 years and have been full-timing with their chocolate lab in a Monaco motorhome for 3.5 years. They are work campers who love the lifestyle, enjoy meeting new friends and look forward to seeing friends and family between jobs.

Ingredients:

  • 1 can of Spam
  • 1 large can of pineapple chunks in pineapple juice
  • 2 cups of prepared rice
  • soy sauce
  • salt and pepper

Instructions:

Cut up Spam into cubes approximately the same size as the pineapple chunks. Saute the Spam until the edges are brown. Add whole can of pineapple with juice. Use spatula to stir and deglaze the pan of the good bits of Spam that may have stuck to the pan. Add soy sauce, salt and pepper to taste. Simmer for 15 minutes. Place cooked rice on plate and spoon Spam pineapple mixture over the rice.
