Each week, Let’s RV will publish one recipe each week from the RV Centennial Cookbook authored by Evada Cooper.
The book features a collection of recipes submitted by RVers themselves. The author is providing the recipes in hopes of encouraging RVers to submit more recipes to be included in a new edition expected to be published soon.
This week’s recipe is for quick fruit salad. It was submitted buy Stephanie from Mesquite, Texas, who grew up RVing with her parents and now continues that tradition with her husband and two young girls in a pop-up trailer.
- 1 can pineapple chunks
- 1 can pears
- 1 jar (8 ounces) maraschino cherries
- 1 small package vanilla instant pudding mix
- 1 can peaches
- 3 large bananas
- 1 cup chopped pecans
Drain all fruit, saving juices in one container. Cut up peaches and pears into size of pineapple chunks. Slice bananas, dice cherries and combine all fruit. Add pecans. Sprinkle dry pudding mix over fruit and add one cup of mixed fruit juices. Stir well and refrigerate before serving.
