Recipe of the week: Campfire potatoes

Each week, Let’s RV will publish one recipe each week from the RV Centennial Cookbook authored by Evada Cooper.

The book features a collection of recipes submitted by RVers themselves. The author is providing the recipes in hopes of encouraging RVers to submit more recipes to be included in a new edition expected to be published soon.

This week’s recipe is for campfire potatoes. It was submitted by Sara Baker of College Station, Texas. She’s just 17 years old and likes helping her mom when they cook this recipe on the campfire. One of her favorite memories is camping with her aunt and cousins in a popup camper at Texas State Parks.


  • 6 medium potatoes
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 onions
  • salt and pepper
  • 1/2 stick of butter


Slice potatoes in 1/4-inch horizontal slices. Slice the peppers and onion lengthwise in thin strips. Melt butter and mix all ingredients in a bowl. Season with salt and pepper to taste, then wrap in double foil and grill on campfire or gas grill until brown
