Each week, Let’s RV will publish one recipe each week from the RV Centennial Cookbook authored by Evada Cooper.
The book features a collection of recipes submitted by RVers themselves. The company is providing the recipes in hopes of encouraging RVers to submit more recipes to be included in a new edition expected to be published soon.
This week’s recipe is for pineapple sour cream pie. Marilyn Brown from Portland, Ore., submitted this week’s recipe. She’s been full-time RVing since her retirement in 2006.
- 1 small package vanilla instant pudding
- 1 container (16 ounce) sour cream
- 1 tablespoon sugar (optional)
- 1 can (8 ounces.) crushed pineapple, undrained
- 1 graham cracker pie shell
Mix first four ingredients. Pour into pie shell and chill. Garnish, if desired, with whipped cream and fresh fruit (strawberries and kiwi, etc.).
