Each week, Let’s RV will publish one recipe each week from the RV Centennial Cookbook authored by Evada Cooper.
The book features a collection of recipes submitted by RVers themselves. The company is providing the recipes in hopes of encouraging RVers to submit more recipes to be included in a new edition expected to be published soon.
This week’s recipe is for oven fried chicken. Stephanie from Mesquite, Texas, submitted this recipe. She said she and her husband enjoy RVing with their two young daughters.
- 1 tablespoon margarine or butter
- 2/3 cup Bisquick baking mix
- 2 1/3 to 3 1/2 pounds of chicken, cut up
- 1 1/2 teaspoon paprika
- 1 1/4 teaspoon salt
- 1/4 teaspoon pepper
Pre-heat oven to 425 degrees. Melt margarine in a 13-by-9-inch pan in oven. Mix baking mix, paprika, salt, and pepper; coat chicken. Place skin side down in pan. Bake 35 minutes, then turn. Cook till done, approximately 15 minutes.
