Recipe of the week: Orange shell cakes

Each week, Let’s RV will publish one recipe each week from the RV Centennial Cookbook authored by Evada Cooper.

The book features a collection of recipes submitted by RVers themselves. The company is providing the recipes in hopes of encouraging RVers to submit more recipes to be included in a new edition expected to be published soon.

This week’s recipe is for orange shell cakes. Pamela A. Praesel from Bryan, Texas, submitted this week’s recipe.


  • 1 box (8-ounce) Jiffy yellow cake mix
  • 6 large thick skin oranges
  • Water
  • 1 egg
  • Heavy foil


Slice two inches from the top of the oranges and save. Remove orange from shell, being careful not to damage shell. Prepare cake mix per instructions. Fill each orange shell half full of cake mix. Replace top and wrap in foil. Bake in campfire or on grill about 20 minutes, turning often. When the cakes are done, eat with a spoon or peel the orange and eat.
