Recipe of the Week: Breakfast sausage wedges

Each week, Let’s RV will publish one recipe each week from the RV Centennial Cookbook authored by Evada Cooper.

The book features a collection of recipes submitted by RVers themselves. The company is providing the recipes in hopes of encouraging RVers to submit more recipes to be included in a new edition expected to be published soon.

This week’s recipe is for breakfast sausage wedges, and was submitted by Debbie Gleaves, from Lawton, Okla.. She and her husband of 40  years have owned campers for almost all of their married lives.


  • 1 package (12 ounces) pork sausage
  • 1 unbaked deep-dish pastry pie shell (9 inch)
  • 2 cups shredded cheddar cheese
  • 3 eggs
  • 1 cup salsa
  • Sour cream, if desired


Heat oven to 350 degrees. Crumble sausage and brown; drain. Sprinkle sausage over bottom of pie shell. Sprinkle sausage with cheese. In small bowl, beat eggs and blend in salsa. Pour egg mixture over cheese and sausage. Bake 25 to 35 minutes or until knife inserted in center comes out clean. Serve with sour cream and additional salsa, if desired.
