Recipe of the Week: Betty’s cherry cobbler

Each week, Let’s RV will publish one recipe each week from the RV Centennial Cookbook authored by Evada Cooper.

The book features a collection of recipes submitted by RVers themselves. The company is providing the recipes in hopes of encouraging RVers to submit more recipes to be included in a new edition expected to be published soon.

This week’s recipe is for Betty’s cherry cobbler. Joanne Molnar from Jacksonville, N.C., submitted this week’s recipe. She said she and her family have been full timing since 2008.

  • 2 cans (21 oz.) cherry pie filling
  • 1 package yellow cake mix, dry
  • 1/4 cup softened butter
  • 1/4 cup¬†pecans, chopped

Pour pie filling into the crock pot or slow cooker. In bowl, place dry cake mix and softened butter. Mix until crumbly. Sprinkle over pie filling then top with pecans. Place a sheet of paper towel under lid and cook on low for three to four hours. Serve warm. Recommended toppings: Vanilla ice cream or whipped topping. Great for potlucks and has an absolutely terrific taste!
